My wife and daughter are at a retreat, my son is still asleep, so I’m having a fantastic lunch- tamales with fried eggs. Yum!

I always forget there’s two very popular  types of Tamales.

Some are made with banana leaf as the mold (the type I like) and some are made with maize leaf as the mold I think the ones you have are with the maize mold. If you haven’t I highly encourage you try the ones with banana leaf (called Oaxacan or Veracruzan at times)

Some are also sweet, and those I really don’t like.

You have a good eye. It’s impossible to get decent tamales in Louisiana, so my in-laws bring us several dozen every time they come visit from south Texas. If I can find banana-leaf tamales, I’ll give them a shot.

I think it keeps it drier when cooking it , which makes the spices in the tamale stand out a bit better.

In the Philippines sweet rice is wrapped in banana leaves. It is an acquired taste because the banana leaves have a very smoky flavor.

I think that for sweet foods, the maize wrapping is probably superior since it doesn’t impact the flavour as much.

The banana leaf was a hard flavor to get off my tongue. My Philippino friend was cracking up at the sour face I was making.
